May Recipe:

Marinated Omega 3 Pork Loin Chops
With an Apple and Pear Maple Bourbon BBQ Sauce

Brine:
1 cup granulated sugar
¾ cup coarse kosher salt
2 cups water
1, 3 inch cinnamon stick
1 tsp juniper berries
1 tsp whole cloves
2 SStar Anise
½ Vanilla Bean (split lengthwise)

Directions:
Bring all ingredients to a boil, let stand cool

Time in Brine:
Pork Chops 1-2 inches thick 12-24 hours
Whole Loin or Rack 2-3 days

Maple Bourbon BBQ Sauce:
1 tbsp Olive Oil
1 large Onion diced
3 Cloves Garlic minced
2 tsp Dijon Mustard (whole grain)
2 tbsp chopped Parsley
2 tsp Smoked Paprika
½ cup Bourbon
½ cup Maple Syrup
¼ cup Red Wine

Directions:
Sauté onion and garlic with oil until translucent. Add mustard, paprika and parsley and simmer for 5 minutes on medium/low heat. Add remaining ingredients and bring to a boil. Reduce heat and simmer for 30 minutes and then remove from heat to cool. Once cool enough puree in blender until smooth.

Apple and Pear Chutney
1 Granny Smith Apple (½ inch dice)
1 Anjou Pear (½ inch dice)
2 small Shallots diced
1 tsp Chives
¼ cup Brown Sugar
¼ cup Cider Vinegar
1 tbsp unsalted butter
Pinch of Nutmeg
Pinch of Allspice
Season with Salt, White Pepper and Lemon Juice.

Directions:
Sauté the shallots in the butter, on medium heat until translucent. Add the Apple, Pear and nutmeg and allspice and cook for 5 minutes or until tender. Combine vinegar and sugar and add to pan. Mix well, cooking for 20 minutes to blend flavors. Adjust flavours by seasoning with salt, pepper and lemon juice. Should have a good balance between sugar and vinegar so adjust if not to your liking.

Grilled Omega 3 Pork Loin Chops:
Lightly Season marinated pork chops and grill on an oiled grill to achieve clear grill mark. While grilling (2 minutes per grill mark) combine your chutney to the bourbon BBQ and mix well. Once done grilling place on a baking sheet lined with parchment paper and spoon on the chutney BBQ mix. Coat evenly and be sure to use the chunky body of the sauce. Bake in a preheated oven, 350 degrees for 5 to 8 minutes and enjoy with your favourite side dishes.
