April Recipe:
George Macaroni and Cheese

1 tblsp George house bacon
1 tblsp Caramelised leeks
2 cups Cooked macaroni
1/2 c White wine
1 cup Garlic sauce
1 cup Chicken stock
1/4 c Parmiggiano
1/4 c MAPLEDALE Aged 2 yr cheddar
1 tblsp Chopped Italian parsley
2 tblsp Whipped cream
Serves 1
Using 1 tblsp olive oil, sweat off bacon and leeks.
Deglaze with white wine and reduce by half.
Add chicken stock and garlic sauce and bring up to a boil.
Add cooked macaroni and reduce mixture by half.
As it reduces, incorporate both cheeses.
Finish with a dollop of whipped cream and chopped Italian parsely.
Season to taste and ensure consistency is thick and creamy.
Garnish with more grated 2yr cheddar.
